I have bought airpods and apple watches before on amazon. so far no issues. 41mm model seems to be around 45K. But do check 48 or 49K price range for 45mm model.

I havent personally used headphones other than airpods, but have read some people are using other brand headphones with apple watch via bluetooth accessory Connect Apple Watch to Bluetooth headphones or speakers - Apple Support (IN) problem is some users did report that their galaxy buds is not connecting with their Apple Watch SE models. But do check reviews on amazon and decide bro.
And yes apple watch cellular works without iphone nearby. you can take it outside and use apple watch alone for calls and messages. apps like whatsapp dont have apple watch app. so you wont be able to use them.
